While out on the porch this afternoon, a particularly hard-working little squirrel caught my eye as he scampered back and forth and labored to gather his little harvest and tote it off to his squirrel place. I thought to myself, “He knows.”
Even though it is still hot outside, the days have gotten shorter, the nights cooler, and there is that “certain slant of light” that tells us that fall is coming, and many people must be feeling it, for many of the recipes I have to share today today make me think of fall—apple cakes, spicy carrot cakes with orange cream cheese. Then there is that wonderful Lemon Ice Box Cake that is just perfect for these hot late summer days. The chicken recipe is one from the good ole days back home, and I can remember the smell of it in Mother’s kitchen along with her hot baked biscuits for which she had a special knack. Still to this day people who knew my mother back in the days when she cooked mention her delicious biscuits to me. I regret that I never learned to make them. Take special note of the Diabetic Cake this week because I think it is one of the better ones because it is not so dry as some. I had a call from a very nice lady in Spring City this week and talking with her I realized that I need to include some more diabetic recipes, and if you have one you like, please share it as so many people would be grateful!
