Chicken Salad

2 breasts of chicken
Celery
Bay leaf
Salt
Onion
Mayonnaise
Lemon juice

Boil 2 chicken breasts with a stalk of celery, bay leaf and onion until the chicken is tender.   

When cooled, separate the meat into bite-sized pieces.  

Chop the heart of the celery until fine and you have a full cup, then pour in a tablespoon of lemon juice and add enough mayonnaise for the ingredients to stick together.

Note:  You can save the broth and cook vegetables for some other use.


Sweet Dinner Rolls

1/2 cup warm water (110 degrees )
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 tsp. salt
3 3/4 cups all-purpose flour
1 (0.25-oz.) pkg. active dry yeast
1/4 cup butter, softened

Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough/knead and first rise cycle, then press start.

When cycle finishes, turn dough out onto a lightly floured surface.

Divide dough in half. Roll each half into a 12-inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into eight wedges.

Roll wedges starting at wide end; roll gently but tightly.

Place point side down on ungreased cookie sheet.

Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400 degrees .

Bake in preheated oven for 10 to 15 minutes, until golden.

(No bread machine?  Mix ingredients and let rise in a greased, covered pan until doubles.  Follow the rest of the recipe as written.)


Apple Pie

1 recipe pastry for a 9-inch double crust pie
1/2 cup unsalted butter
3 Tbs. all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
8 Granny Smith apples, peeled, cored and sliced

Preheat oven to 425 degrees . Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil.

Reduce temperature and let simmer.

Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust.

Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.

Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees .

Continue baking for 35 to 45 minutes, until apples are soft.
