This week I have pulled together from a variety of sources, including Mother’s old cookbook, some canning recipes. There is a certain sense of satisfaction in having some things in your pantry or on your shelves that you yourself have canned. Many people like the idea of canning but don’t do it because they think it is too hard or too much trouble. While it does take a little time, it can be very rewarding. My sister and I used to make a game out of guessing which jar would be the first to “pop” as it sealed! If you are thinking about canning for the first time, pick something simple and give it a shot. The recipes that I have included this time are pretty basic. One of my favorite things that Mother used to put up is the squash pickles. They are both colorful and delicious and seem to go with everything. The Indian Relish is another thing that everyone seems to like and I have yet to find anyone who does not like it. The Zucchini Relish is both easy and tasty, and the Mustard Pickles are very good for all the more work it is. You should try the green pepper jelly and keep some for Christmas time as it looks great on a Christmas party table. If you make green pepper jelly, you might consider putting in some chopped, red ones just for the contrast in colors. Then, too, canned things make great gifts any time of the year, and they are practical too. With all the great produce that is starting to come in this summer, it would be a great time to think about putting up something special. But most of all have fun doing it and share it with somebody.
