When Kristi Green first joined the staff at Rhea County High School, I knew right away that we would be friends. With her warm smile and winning personality, people are naturally drawn to her. I also learned right away that she loves teaching and works hard to engage her students, whose hearts she quickly captured. Mrs. Green is one of those “natural born” teachers who loves what she does, and it shows — everyday! It did not take long for Kristi and me to get around to talking about cooking, and I could tell right away that she was no stranger to the kitchen, so when she agreed to help me with this column, I was delighted! As Easter draws near, what better time to think about eggs and cooking with eggs, and Kristi and her two daughters, Shelby and Sydney are experts … or should I make that “eggsperts?”
There was once a time when the number of pleats in a chef’s hat denoted the number of ways he could prepare eggs, and I imagine that if Mrs. Green were to follow that old tradition, her hat would have many! I know you are going to enjoy sharing her story and her recipes today. Make this a good week, and let me hear from you soon!
